We've all done it. We've painstakingly prepared a dessert only to have it emerge from the oven looking like a failed 8 th grade science project. Well, that doesn't matter, we think, As long as it tastes good. When cooking for yourself, you're probably right. But when you're a baking and pastry arts chef , presentation stands for a lot more than you'd think.

You might think that presentation, art of modifying, arranging, or decorating food to enhance its aesthetic appeal, is a superfluous extra important to only the most meticulous of diners. The truth is there is an entire psychology behind food that can affect your patron's experiences. So how important is presentation in culinary arts? Important.

What does Psychology have to do with Food?

In a psychology class a professor holds up what looks like a dirty diaper and explains to the students what's in the diaper is chocolate pudding. They then ask if any students want to taste the chocolate pudding. No one in the classroom moves.

Cognitively, the students know that the diaper is clean and there is chocolate pudding smeared on it. But the presentation is so stomach churning that even knowing this, no one is willing to try it. This is an extreme example, but it goes to show how little we realize food is affecting us psychologically.

Beyond diapers, there are a great deal of other ways we are affected by food without even realizing it. For example, you open your own bakery and name your signature dessert "Red Velvet Cake". Did you know if you named it something like Exquisite Red Velvet Crème Supreme Delight, your patrons will actually believe it to be more delicious? Even if it's the same recipe and execution .

Not only the name of the meal, but other factors in play as well. Everything from the lighting to the actual plate you up the dish on has importance in constructing the dining experience. That's right, even the plates need to lend themselves to the mood and atmosphere.

For example, your red velvet dessert? It would be probably be best served on white round plates, as people tend to indicate it enhances sweet flavors in food . Meanwhile, if you're serving up a meat pie for dessert, you might want to serve it on a black, angular plate to bring out the savory notes.

Wait, Why Would Plate Shape have an Impact on the Taste of Food?

It might be difficult to see the connection between a white round plate and thinking food tastes sweeter and it definitely is. Researchers are baffled as to why this is true as well. Although they don't quite understand the reasons why this work, there's plenty of evidence to support that it does. Research is still being conducted, although there are several guesses as to why this response is taking place.

Food presentation is a lot like graphic design. You need to balance color, texture, and proportions, among other elements, to create a cohesive and appetizing final product. Let’s face it; decorating bread is not everyone’s cup of tea. Besides, it is hard to conceptualize the plain-old loaf of bread as something beyond the wheaty color. 

If you want to spice up the decor and looks of your bread, we’ve come to the right place. Take inspiration from these three ways to decorate bread!  

  • Scoring a Bread:  You’ll require a double edge stainless steel razor for art slicing your bread. At times, a scissor or serrated knife can also help you get perfect results. Make beautiful perpendicular slashes to create a leaf-like design. You can design your bread after proofing the dough. You can choose to go symmetric or asymmetric for your bread design. 
  • Using a Stencil:  Stenciling powdered designs onto the bread is yet another unique method. To attain those artful designs, you can low simple stuff like a lace doily, lead, or pre-cut stencils. Remember, imagination and creativity are boundless. You can also create custom designs to decorate your bread. You can use ingredients like flour, dehydrated vegetables, fruit powders, or cocoa to create beautiful designs.

When it comes to creating a perfect display for a bakery store, we all can use some inputs and suggestions! For a bakery to run well, you need a great-tasting product and something that appeals to the eye. 

With that idea in mind, we have a few tricks up our sleeves that will lead you straight to dreamy bakery product presentations! So, here are some ways to present and display bakery products.

Make Use of Accessories 

Don’t limit yourselves to just display boxes and baked goods when presenting your delicious artistry! Apart from those tempting-looking baked stuff, you can also increase the appeal with decorative accessories.

Instead of going with simple display boxes, you can opt for something fancy. Similarly, you can use quirky and printed placemats to liven up the space. If you are looking for ideas for a bake sale table, you can use buntings and similar funky items to enhance the visual appeal. 

Avoid Empty Spaces 

One of the key points to remember while presenting your bakery products is to avoid empty spaces. Don’t leave any hot spot empty! You can create a comprehensive display to attract more customers and boost the sales figures. Keep the area organized from the opening until the closing hour.

You can also switch products as the products sell out. Also, keep your baked products in a tray or basket to make them easy to change positions.

Don’t Forget Name Cards and Toppers. 

One of the essential things for bakery product display is name cards. If you have foreign visitors on your doorstep who are not aware of traditional baked goods, the name cards are an excellent way to help them out. What’s more, it also makes your job easier and avoids confusion.

You can opt for beautiful printed name cards for all the baked stuff. Also, you can use cake or cupcake toppers to cheer up the presentation.

Color Coding Works Too! 

Color coding works best for all products, whether food or funky stationeries. Depending on the vibes and store decor, you can present your baked products in a color-coded fashion. For instance, if your store logo has hints of green, you can pick green cupcake liners.

Similarly, you can customize the packaging boxes to match the color combination of the rest of the products. You can keep the chocolate stuff in one spot and the colorful baked goods in a separate area while displaying. The key to a perfect bakery product display is trying out several ideas and seeing what works the best!

Keep Sweets and Savories Separate 

Don’t let your customers get confused about the baked products. Besides, sorting the sweet and the savory into different spots is a good idea to show the diversity of products available. You can keep the sweet baked goods such as cupcakes, cakes, cake pops, muffins, tarts, and others in plastic trays. Also, you can store cookies in giant-sized jars to shuffle things up.

For savory items like loaves of bread, you can present wrap them in liners that match the colors of your bakery shop logo. For other things like quiches, puffs, pies, and more, you can choose to display them on trays lined with doily sheets.

The presentation and display are essential for increasing the sales and footfall for any bakery store. The display strategy also plays a role in keeping your baked items fresh and tasty for a long time. Putting efforts in decorating your finished baked products can help you attract many customers. Depending on the season and festival days, you can opt for different display themes. For instance, many bakeries opt for a Christmas-y look for the display during the festive period. Such decor delivers a good vibe and feeling to the customers. 

One of the biggest challenges that bakers face is to keep their cakes, cupcakes, and pastries fresh and prevent them from rotting. The good news is that most cakes hold shape and stay fresh if you leave them on countertops.  But, if you know that you’ll require them to display all of them long, a refrigerator is a must. You’ll also notice that bakeries store the delicate stuff away from the sunlight. The key to keeping cakes and cupcakes fresh all day is to keep them in a chilled spot. 

Hundreds of nozzle designs are available, but not all are apt for making swirls. Some nozzles give grass-like frosting, while others mimic flower designs. You can use the star-shaped nozzle to make perfect swirls on your cupcakes.  You get two types of star nozzles – closed and open. If you want to create delicate swirls, you can use the closed star nozzle.

10 Design Principles for Plating Food

A checklist:

  • Flow from left to right
  • Splash of colour on left
  • Height on right side

In the western world, we read from left to right. When a new image is presented to us, we tend to scan it from the left side to the right side. You can use this knowledge to influence the placement of food on the plate. If you have a bit of colour on the left side of the plate (sauce, fresh fruit, etc.), the eye will be attracted to that. If you plan to have height on the right side of the plate (garnish, ramekin, etc.), it will draw the eye across the plate (Figure 6).

Your eye should be able to flow across the components. There should be movement on the plate. An upward curve of a tuile or chocolate garnish, a connection between two components with a caramel stick, or the flow of coulis can help direct movement and create a focal point . All these items combined will make a plate more appealing visually and attract the eye of the diner before the dessert is eaten.

The main component of the dessert does not always need to be centred, but can be placed slightly offset. Generally, sauce, ice cream or sorbet, and the main garnishes should radiate from the main component without a lot of separation. This allows the plate to have a balance of white space and not look too busy or confusing. Keeping components away from the outside edge of the plate will also help balance the presentation.

On the plate in Figure 7a, the two main components are pushed to the outside of the plate, causing the eye to focus on the emptiness (or negative space ) in the middle. On the plate in Figure 7b, the components have been brought together, making a connection between all three items. This creates visual harmony.

Figure 8a shows the correct design principles (colour on the left, and a garnish that is high on the right side), which do cause the eye to move left to right, but the cake is pushed back almost to the very edge of the plate. The sauce is all on the left side. The combination of the two uses only about half of the surface area. This highlights the negative space on the plate.

In Figure 8b, the sauce is piped across the entire surface of the plate, and the cake is brought almost to the centre, creating more balance.

Figure 9a shows a dessert with a lot of sauce, done in similar shapes. The highest item is placed incorrectly, in the bottom left corner.

In Figure 9b, the presentation is simplified. Movement is controlled, drawing the eye to the tallest component. To help balance the plate, perhaps another component could have been added in the middle. Think about what might make an appropriate addition.
