Describe an Unusual Meal You Had [IELTS Speaking Part 2]

In the IELTS speaking test, it is quite common for people to be asked about food , but today I would like to go beyond that and look at a much more specific topic: describe an unusual meal .

This article is going to approach the topic in 5 steps:

  • Analyse the cue card
  • Generate ideas
  • Pick the right language
  • Give a sample answer

You can skip ahead to the end of the article if you only want to read my sample answer. Otherwise, you can methodically go through the lesson for maximum benefit.

IELTS Cue Card: Describe an Unusual Meal

There are various possible cue cards that could relate to this topic, but the one I most frequently see tells the speaker to “describe an unusual meal you had.” This is what we will explore today but please remember that it could be slightly different. For example, it might say one of the following:

  • Describe an unusual dinner you had
  • Describe an interesting meal you had

Other quite common versions of this say:

  • Describe an unforgettable meal you had
  • Describe a memorable meal you had

Anyway, you can see the theme: you must talk about a meal . This is absolutely the most important thing and it is the first one that you should pay attention to. The other aspects will define how you deal with it.

Here is today’s cue card:

Describe an unusual meal you had You should say: – when it was – where you had the meal – what happened during the meal and explain why it was unusual

How to Analyse an IELTS Speaking Cue Card

Remember that you should not just fixate upon one aspect of the card. In this case, it is important to understand that you cannot just talk about any cue card. It must be the cue card that you have been assigned.

If you are asked about an unusual meal, make sure that you describe one that is unusual . If it is unforgettable, you must explain why it is unforgettable .

Also, you can look to those suggested talking points for ideas about what you should say. You can try to cover each of these during the 2 minutes that you have to speak. This will help you talk for longer without forgetting what to say or becoming too nervous.

In this case, we should think about the word “unusual.” What does it mean, exactly? What is and isn’t unusual?

Well, “unusual” is subjective. What is weird to one person is normal to another. Also, it could be positive or negative. I have had some unusual foods in my life that were really delicious… and some that were pretty disgusting.

Also, notice that it says “unusual meal” and not “unusual food.” That means you should not talk about a snack.

Generating Ideas

Once you understand the cue card, you need to quickly think of ideas. For IELTS writing, you should generate ideas over a period of several minutes, choosing the best one to write about for your essay. However, in IELTS speaking you do not have the luxury of time.

Instead, you should pick an answer quickly and then use your 1 minute of preparation time to plan an answer in your mind.

For me, the problem is that my most unusual foods were all snacks, not meals! This would be a problem, so I would have two choices:

  • Change and think of a meal
  • Pretend the snack was a meal

Those both have major pros and cons but I would say that the best option is to change and think of something. Remember that you can always explain later why it was an unusual meal . Remember that it can be unusual in a good way or a bad.

Check out these two examples:

  • I remember having a really unusual meal once when I was in China. The host cooked some really strange foods, including dog meat. I was so surprised and a little repulsed, if I’m honest.
  • We had a wonderful meal last year that was quite unusual. All of my old friends got together for the first time in a decade, which was great. We had a beautiful dinner together and talked about our lives.

You can see that the first answer interprets “unusual” as “weird” but the second takes it as “different from normal.” These are both correct interpretations.

Making Notes

When you are given the IELTS speaking cue card, you then have just 1 minute to prepare your answer. By the time you have read the cue card and thought of some ideas, you probably do not have much time left, so don’t even think about writing full sentences.

Instead, you should write a few words or phrases to help you remember important words or ideas. Even two or three or four words can help. This will also reduce the stress that you feel because you will be confident in having some words in front of you.

For this, I would write something like:

  • Insects – crickets
  • 2 colleagues
  • Crunchy and salty

So here I have made three short notes of two or three words each. It would just take me a few seconds to write this, so it does not eat up my valuable time. These notes don’t mean much to anyone except me but that is ok. They serve an important function: the first one gives an important word to use for the food, the second is a good vocabulary item for the people eating, and the third contains a description of the food.

Picking the Right Language

Let’s look again to the bullet points from the question:

  • when it was
  • where you had the meal
  • what happened during the meal

These tell us some of the things that we should talk about during our 2-minute speech. The part about “when” probably doesn’t require much thought, but “where” and “what happened” might, as well as the last part about “why” it was so unusual.

When you are talking about food , it is important to use interesting vocabulary to describe tastes and textures. Don’t just say “ it was delicious ” or “I liked it.” I actually wrote a longer article about describing food, which you can read here and I have made this video of descriptive words for talking about food:

You should also be confident talking about the dinner situation. This may involve casual phrases about paying the bill or ordering food, but of course it depends on the precise cue card, your interpretation of it, and your answer. Here are some phrases you could use:

Sample Answer

Alright, here is my answer to the above cue card.

To be honest, “unusual” is a very subjective term because what is strange to one person is probably normal to another. Personally, I’ve been living in Asia for 13 years and I regularly eat things that most people would think are weird, such as jellyfish, chicken feet, and other parts of animals that are uncommon in the West. However, these things are perfectly normal to the people in the countries where I have lived. About three years ago, I was at a restaurant in rural China with two colleagues. They were locals and so they introduced me to the local cuisine, which is not exactly the same as Chinese food in my country. This involved many things that people would considered “unusual,” such as fried insects. There were several types of insects but the ones that I liked best were the crickets. The method of cooking meant that they ended up crunchy and salty. I have always been keen to try new things and so I was not afraid to sample the fried bugs, but I certainly didn’t think that they would taste good. I sort of assumed that they would be disgusting and mushy, so it was a pleasant surprise for me. Although this meal would be quite normal for some people, it was unusual for me due to the interesting foods on offer.

Notes on the Sample Answer

This answer covered all of the instructions on the cue card and dealt fully with the topic. I feel confident that any examiner would be happy with it.

My language was also very much appropriate. I have described the food in pretty good terms and also the restaurant and the meal. I did not use much “difficult” vocabulary because this is ridiculous. There is no need for obscure, scientific words in a topic like this. It was enough that I mentioned the crunchiness and saltiness of the food rather than just saying, “It was good.”

Of course, any sample answer is worthless if you cannot say the answer aloud. This would get a band 9 if it were spoken by a native speaker but if you have many pronunciation problems and issues with stammering or stumbling over words, then it might not help you much.

Follow-up Questions

After doing this cue card, you may be given other questions about food, meals, or unusual things. You might, for example, be asked:

Why do some foods appear unusual to some people but normal to others?

I would then answer:

People evolved over thousands of years in different climates, so they produced different cuisines. In my country, Scotland, we did not have many spices but in places like India they had a huge variety of spice. Because of this, these countries had totally different approaches to food. As a result, anyone who is a product of one country can travel to another and be surprised by the cuisine there.

Here are some more possible follow-up questions:

  • Do you think having dinner at home is a good idea?
  • Why do you think some people choose to be vegetarians?
  • What do you think are the benefits of having dinner together?
  • Is the food that people eat today different to the food that people used to eat in the past? If yes, in what ways has it changed?
  • Do you think people are less willing to cook meals by themselves these days, compared to the past?
  • More and more people are becoming overweight nowadays. What do you think might be the causes of this?

Remember that for these last questions you should try to give a little detail. Your answer should usually be structured like this:

  • Give a straight answer
  • Provide an example or further explanation

If you do that, you should be on course for a good result.

I am not a huge food connoisseur; however, I’ve taken a shine to try a diverse fusion of food items. So, last weekend, I went to Delhi to explore newly-opened restaurants and cafes at Connaught Place. While reconnoitring, I came across Cha Bar. It is located inside a bookstore and has an extensive range of salads, tea and delectable snacks.

I was drawn towards its interiors as well. Thus, I called up a friend and arranged a meeting after years. Once there, we ordered a Gulab Jamun Cheesecake and a Tiramisu. To begin with, none of us had imagined that we would get to try such a fusion and combination.

At first, I was a bit sceptical regarding this order as I didn’t want my money and food to go to waste in case we didn’t like the taste. However, when our order arrived, my friend and I were enthralled with the plating. At the first look, it seemed delightful. When it came to the tasting part, both orders were finger-licking delicious.

We were surprised at the different yet authentic taste of Gulab Jamun Cheesecake. To my surprise, my friend ordered two more of the cheesecake, one to eat there and the other one to take home. Overall, the experience was wonderful and memorable.

The most special meal I’ve ever had in my life was on my Dad’s birthday last year, which was prepared by all of my family members.

The idea was put forward by my sister. We planned to surprise him and by preparing his favourite foods. On that day, my Mom cooked Pho, a Vietnamese beef noodles, while I baked a birthday cake for him. My siblings were in charge of decoration and music. Everything had been done perfectly a little bit earlier before he came home. When he opened the door, he was astonished on seeing a colourful “Happy birthday Daddy” banner stuck on the wall in the living room. Standing in front, my Mom gave him a bouquet of red roses, his favourite flowers. We enjoyed the scrumptious meal and shared our best memories with my Dad.

After washing the dishes, we gathered in the living room. My Dad made a wish and blew candles. He was in tears and told that he was over the moon and he was proud of us, his home and his family. We gave each other huge hugs before going to sleep.

Here are the vocabularies for “describe a special and memorable meal you have had” with examples:

  • Over the moon (idiom) very happy Eg: John was over the moon when he heard the news of his promotion.

Model Answer:

I think, life wouldn’t be as much fun and enjoyable if we didn’t get to enjoy all those delicious foods with our friends and families. Today, I would like to talk about one such meal which wasn’t only pleasing to my appetite but also unforgettable for some reasons.

I can still vividly remember the 14th of August of last year when I got to enjoy this unforgettable meal with a few friends of mine on a weekend to celebrate the “recovery from illness” of a special friend. By the way, this special friend of ours was suffering from a critical and chronic disease. Then one day, about a year ago, we got a piece of very happy news, and it was, as you probably can already guess, the news of the “full recovery” of our sick friend.

We immediately decided that we were going to take him to his favourite restaurant in our town, where we all used to hang out together on the weekends before, and offer him a very special meal, made with a “secret recipe”. So, we went there and started to enjoy our meals together in that restaurant. Then we all noticed that our friend, just recovering from his illness, was trying to wipe up the tears from his eyes, apparently because of the overwhelming emotion and happiness of being close together with his dear friends, again.

By the way, during that meal, we even sang some of our favourite songs together for old time’s sake. Besides, we also laughed a lot there because the “secret recipe food”, which we enjoyed there, was nothing but a recipe for a very delicious and popular Italian cuisine except, of course, he didn’t know it!

Anyway, after finishing the meal, I thought that it was a very special one, mainly because it had brought back some of my best and old memories – memories of being with all my special friends- back again. It was unforgettable also because it was celebrated on a special occasion when one of my dear friends literally got his “life back” again.

At first, I was sceptical about the idea of eating insects, but my friends convinced me to try it. The restaurant had a variety of insects to choose from, including grasshoppers, crickets, and beetles. We decided to order a plate of mixed insects to share.

I couldn’t help but feel a sense of curiosity and excitement as we waited for our food. When the dish arrived, I was surprised to see that the insects were served with soy sauce and a sprinkle of sesame seeds. We each took a piece and tried it. The texture was crunchy, and the taste was salty and a little bit nutty.

Despite my initial hesitation, I found myself enjoying the meal. We continued to try different insects and even ordered a second plate. It was a unique and unforgettable experience, and I’m glad I tried something new.

The restaurant was located in a quiet alleyway in Tokyo, and it was quite small, with only a few tables. We were the only customers at the time, so we had the staff’s full attention. They were very friendly and explained the different insects to us.

It was a memorable evening; we laughed and talked about our experience for days afterwards. We were all proud of ourselves for stepping outside of our comfort zones and trying something unusual.

In conclusion, the unusual meal that I had in Tokyo was a memorable experience that I will never forget. I was with my friends, and we went to a small restaurant that served insects as a speciality. It happened a few years ago, which was unusual because it was something I had never tried before. Despite my initial scepticism, I found the meal to be surprisingly enjoyable, and it was a unique and unforgettable experience.

Last year, during my trip to India with my girlfriend, we had an opportunity to try an unusual meal that we will never forget. It happened when we were exploring the streets of Delhi and stumbled upon a small food stall selling a dish called “biryani kofta.”

We were curious about this dish and decided to give it a try. The dish consisted of small balls made of minced meat cooked in a flavorful biryani sauce. The dish was served with a side of raita, which is a yoghurt-based condiment.

The meal was unusual for us for a few reasons. First, the combination of biryani and kofta was not something we had seen before. Second, the dish was cooked on an open flame right in front of us, and the aroma was incredibly enticing. In conclusion, our experience trying the biryani kofta in Delhi, India, was an unusual and unforgettable meal. We were able to try something new and experience the local culture, which is what travelling is all about. We left feeling satisfied and grateful for the opportunity to try this delicious and unique dish.

Introduction

As a food enthusiast, I love trying various mouth-watering delicacies to pamper my appetite.

Recently I tried an unusual meal that is worth mentioning.

When did you eat it?

Last year there was a lockdown in my nation due to the corona pandemic. During that time, I stayed indoors for a few months and felt upset.

Finally, when the administration lifted the lockdown, I was in a state of euphoria. And to celebrate my freedom, I went to the village of my bosom friend Vivek. The primary aim of my trip was to spend quality time with Vivek.

At Vivek’s residence, I had an unusual meal that was delicious.

Where did you eat it?

I had the meal on the rooftop of Vivek’s house.

With whom you had the meal?

While having the meal, I had Vivek’s whole family with me.

Why do you think it was unusual?

The meal was unusual because Vivek’s mother cooked it in the solar cooker. As I went in summer, there was scorching heat, and Vivek’s house had a massive rooftop.

Her mother served me, Mustard Mash with Miaze Bread and Rice pudding.

The taste was divine because the cooking process was not harsh on the food. Moreover, all the spices were in the correct quantity. The aroma of the meal was fantastic.

Although I had eaten like a horse , I was full of beans because the food got digested easily.

Having an organic meal cooked using an alternative energy source was unforgettable.

After returning from Vivek’s place, I purchased a solar cooker, and I often cook on that.

In this modern era, the world has become a global village. Due to that, the cuisines of different places are available in my city, and I have tried most of them. Today I will talk about an unusual meal unavailable in the cities.

When did you eat it?  and  Where did you eat it?

Last year my father took me to his friend’s village for a wedding celebration.

Being a social butterfly, I make new friends with tremendous ease. Many guests at the wedding were my age, and I befriended them. And I had about 20 people with me while having the meal.

It was unusual because, being a city dweller, I first ate a mead cooked on an earthenware stove , also known as a clay stove or mud stove.

Firstly, the meal had a unique and different flavour because of the porous nature of the clay. The uniqueness of the taste was due to the clay, which absorbs and throws moisture gently, helping to keep the food moist and soft.

 Moreover, the clay stove possessed good insulation, maintaining the heat’s consistency and keeping the cooking temperature low. Consequently, the cooking remained even and thorough. 

Lastly, the food cooked through was healthier as the chef did not use any chemicals or heat in his cooking process.

All the food items were mouth-watering, and to have the same things at my place, I installed a tiny earthenware stove where I cooked the meals of my choice.

Being a food enthusiast, I have this uncanny knack for trying different delicacies. Recently I had an unusual meal which I enjoyed a lot.

Last month I went to Jalandhar city for a two-night stay. There I tried kulhad pizza for the first time.

I have the habit of trying the street food of the city I visit. Before arriving in Jalandhar, I watched numerous food blogs for the food available in the city. One of the blogs was about a newly married couple who created a new dish named Kulhad Pizza.

I enjoyed the meal with my bosom friend Andrew.

It was unusual because a usual pizza has its set recipe. In the past, chefs used to bake them in wood-fired ovens. With time, a lot of changes took place, and the electrical ovens have become the main cooking machine for pizzas. And most restaurants use them for baking.

But having pizza cooked in Kulhad(Clay pot) is out of the box. In Indian cooking, Kulhads are mainly used for serving tea, and these days in every nook and corner of the cities, there are numerous shops selling tea in them.

One couple from Jalandhar city thought beyond the conventional domain and created a new dish. Instead of baking a pizza the usual way, they brought a paradigm shift in pizza cooking by putting all the ingredients in a kulhad and then baking it.

The baking in Kulhad enhanced the pizza taste, and it was awesome. It was better than any other pizza I had eaten in my life.

Although I have eaten various unusual meals in my life, one of them is beyond the conventional domain and hence worth mentioning.

I ate it last summer.

I ate it during a trip to the Himalayas.

Last summer, I went to the Himalayas to get an escape from the scorching heat of North India. I went there with my family. During our journey, we went to a village near Shimla City. There from the locals, we knew about a special vegetable called “Guchi Mushroom”.It is a rare form of mushroom which is available in the Himalayas.

Finding Guchi mushrooms is an uphill task because they are available in higher altitudes. Moreover, they are never found in bunches and sometimes, for finding a single mushroom, you need to travel five kilometres in the hills.

Apart from this, the locals told us that Guchi mushroom provides enormous health benefits, and due to this reason, the price of one kg mushroom is around 400 dollars.

After knowing vital information about the Guchi mushroom, we decided to try it. For that, our tour guide took us to an eating joint in the village. There he served a dish called Guchi curry with assorted pieces of bread. The taste was unique, and despite eating an enormous quantity of it, I did not feel heavy.

The meal was unusual to a great extent because I had it for the first time. Moreover, I had it fresh because the chef served us freshly picked mushrooms. Lastly, we paid a high amount of 500 dollars for that meal.

Recently I had the opportunity to eat a unique eatable.

Two months back, I enjoyed an unforgettable meal that is worth sharing.

I ate it at a newly opened Mexican restaurant.

One of my friends invited me for a meeting at the new restaurant he had opened, and I had a meal with him.

It was unusual for many reasons. My friend served a ranch-flavoured chicken dish he cooked using Ranchology seasoning mix. 

Although it was a usual chicken dish he baked for 30 minutes in the oven, the Ranchology seasoning mix added to its taste, and the flavour was unique. For the first time, I tasted something like that.

To prepare the delicacy, he marinated chicken pieces in a mixture of Ranchology seasoning mix, curd and tomato juice for half a day. Then, he baked the chicken for long hours to enhance its taste and aroma. Moreover, he garnished it with finely chopped coriander and spring onions.

The earnest effort of a friend produced a distinct flavour for which the credit went to the Ranchology seasoning mix. The taste was truly unique compared to anything I had eaten before. The ranch flavour had a distinct touch that was tangy and savoury and adding garlic, ginger, and onion enhanced the presentation considerably.

Although the dish had a strong flavour, it was comfortable to eat and gelled perfectly with the chicken.

The unique feature that made it particularly unusual was that I had never tasted Ranchology seasoning mix before, and the thought of using ranch seasoning for cooking a chicken dish never came to my mind. That day, I ate like a horse.

Overall, I had a gala while enjoying this unusual meal. I would support trying Ranchology seasoning mix on various food items to enhance the taste.

In this modern era, fierce competition has become a vital part of our lifestyle. Due to this reason, the leisure time at our disposal has been reduced substantially. In such a scenario, the percentage of people who cook food at home has declined considerably.

Moreover, the food delivery applications like Zomato and Swiggy have made delivering outside food extremely easy. It is another reason for the rise in the preference for outside food.

5. What is the best way to learn cooking?

In this modern era, we have many ways of learning to cook. Firstly we have blogs where millions of recipes are available along with the cooking procedure.

Apart from this, on platforms like Youtube, Instagram and Facebook, many creators have uploaded videos where they teach cooking in detail.

However, the best way to learn the meat and potatoes of cooking is to work in the aegis of a seasoned cook to have real-time experience. While learning cooking, you need to take a feel of the aroma and many other factors for which we need live support.

Let me tell you about this memorable meal I had with my college friends! It was after our last exam, and we wanted to celebrate the end of our college years. So, we went to a fine dining restaurant in the heart of the city .

Even though it costed a lot, it was definitely worth it . We all pitched in to cover the bill, and it was a great feeling to do something special together. I remember we experimented a little when we ordered the dishes. Two dishes that stood out were the truffle pasta and the lobster rolls. I still vividly remember how wonderful it felt to eat them.

The food overall was absolutely incredible. Every bite was like a little piece of heaven . It was the time most of us had experienced such fine dining, and it was truly unforgettable. I think what made it even more special was that it was our last hurrah before we all went our separate ways.

After that meal, we moved to different parts of the world and commenced our own careers. Some of us got jobs, while others went on to pursue higher studies. But that meal will always be a special memory that we share. It was a perfect way to cap off our college years and begin the next chapter of our lives.

I'm an avid foodie , and I love trying out new and exotic dishes whenever I get a chance. Although I'm usually limited to Indian cuisine, I'm always open to experimenting once in a while. And that's precisely what I did when I did this memorable meal.

I ordered a seafood paella, which was a mix of rice, saffron, shrimp, and clams. The dish was so flavorful and fragrant that I couldn't help but devour every bite. I also had a side of roasted vegetables, which complemented the dish perfectly.

What made this meal truly unforgettable was the ambience of the restaurant. It had a warm, welcoming vibe that made me feel right at home. The service was exceptional , and the staff went out of their way to make sure I had a great experience.

I never thought I would enjoy a non-Indian dish as much as I did that day. It was a pleasant surprise and made me realize that I should be more open to trying out different cuisines. I'll always remember that meal as the one that opened up my palette to new and exciting flavours.

‘draggedt hrough the garden’ as the locals say, any mention of a Chicago hotdog today brings back memories of that night. It was mid-June, but my husband, two kids, and I were freezing. The bright lights of Wrigley Field illuminated a constant drizzle as we cheered on the Cubs in their defeat of the White Sox.

“Our plastic ponchos proved inadequate, though, leaving our clothes damp and our bones chilled. We alternated bites of the iconic hotdogs with cheers for the Cubs, especially when catcher Willson Contreras hit a grand slam. I tried to explain to my son and daughter what a big deal a grand slam is in major league baseball.

“Afterward, on the subway back to our

hotel on State Street, my daughter held her stomach and closed her eyes, saying she felt sick. I prayed she wouldn’t vomit all over the baseball fans crammed into the train. We wondered if that mysterious, green relish was to blame.”

My husband Jay and I were traveling with two Chinese colleagues, Bin Bin Fu and Jinxing Chou, and 13 college students in China for three weeks. One day we left the students with Jinxing and had dinner with Bin Bin’s parents in Beijing at their favorite Peking Duck restaurant. They only spoke Chinese and Russian so BinBin had to translate then entire meal. It was most delightful and the food was fabulous. But the meal I remember the most was in Sudhou, the city Jinxing grew up. We were invited to have tea and then lunch with his mother, cousins and Uncle. We ate at a very fancy restaurant where their specialty was goose. We sat at a round table and fortunately for us everyone spoke English. Jay sat next to the uncle and they had a wonderful conversation as he had traveled to the US and wanted to share his experiences. The goose was very tasty. There was something strange on the plate. Jinxing explained that it was a delicacy in China. I put the object into my mouth and started to chew. After sometime of chewing I had still not broken it down. It had no taste either. I looked around to make sure no one watching and I slipped it out of my mouth onto a napkin. Then I dropped it into my purse. Later I learned it was goose feet. The Chinese are known for using every part of an animal or fowl for food. After I told them what I had done, both Bin Bin and Jinxing teased me about it during the rest of the trip. I don’t know if the rest of the people ate their or not. I will never know. It is a meal I will never forget.

Under a beautiful blue sky in a crisp 68 degrees, a baby downy woodpecker was learning to eat, and the nuthatches had arrived to take note. I woke this morning with the yearning to write! I love writing but decide to give a few crumbs of my time to God, and then walk down the country road before I write. On the way in the driveway from my walk, I notice the Swiss chard and beet greens in the garden. I’d better pick some before they bake from the sun. I pruned the tomato plants, cutting off the suckers hoping to find bigger tomatoes on the vine in time and made several trips to the compost pile, conveniently half-way to the forest behind the house. I made deviled eggs and sandwiches for lunch and set that aside, looking for Swiss Chard recipes. I found a great one – Swiss Chard and Potato Frittata, with cheese melted on top. Just what a farm boy would love. In fine print, I read that after washing the Swiss chard several times, all four-hundred leaves I picked had to be stripped of the center stem, and the leaves chopped into a million tiny flecks of green. Larry stepped in the door. “Before serving lunch would you bring me my camera? Do you want to see what I brought home?” That grin was a little suspicious; I went for the dangling carrot. He had, in his gloved hand, a mummified cat found in the neighbor’s shed under years of ‘stuff’ piled on it. Looking for something for the neighbor, he found the mummy at the bottom of a big box of rags in the back corner of the shed. It was gross! The flat, stiff, morbid cat cut my appetite to zero. He ate lunch on the porch alone while I retreated to the kitchen. The kitchen is hot. The window air conditioner down the hall is for special occasions, and a kitchen temperature of 87 was not one of them. Larry called out “Thanks for lunch; I’m going out with the tractor to collect boulders.” A worthy project for a man with time on his hands. Meanwhile … saute onions until brown, six to eight minutes; saute potatoes until brown, six to eight minutes; add chopped Swiss chard and cook another six to eight minutes. In a separate bowl combine eggs, egg whites and salt, and pepper. Whip until frothy. Yes, I too was whipped and frothy by now. Add the onions, potatoes and Swiss chard to the egg mixture. Pour into preheated cast iron pan. Cook, covered for three to five minutes until set. Sprinkle a generous amount of shredded Cheddar cheese over the top and set under broiler for three to five minutes. By now I have dirtied every colander and cutting board we own, two pots, one fry pan, several bowls, whisks, and still have all the breakfast and lunch dishes all on the counter to wash. Larry thinks it’s more fun to wash dishes together than use the dishwasher, and I agree when I’m not so hot, whipped and frothy. Not-so-together, while washing and washing the dishes, the timer went off, and I pulled the piece de resistance from the oven. It was beautiful! I ate my sandwich, alone, and was patting myself on the back for effort when I heard a crackling sound on the stove and thought, oh, it’s crisping up so nice, this is wonderful. Three dishpans later – still a crackling sound and now a funny smell. You won’t believe this. I had pulled the cast-iron masterpiece from the oven, set it on the potholder on the burner to protect the smooth-top stove, but I never turned off the burner. Now the potholder is crisping up nicely and about to catch on fire, the crust of my masterpiece is black, and I’m so hot! Before Larry returns, I placed the potholder in the garbage and took the whole bag out to the garage. He’ll never miss it. I turned on the fan to dispel the fragrance of burning pot holders and extra crispy frittata. It’s now 3:00 and almost time to start dinner. Where did I lose my focus? Maybe a few crumbs of my time is not enough to keep God in control. I wanted to write. If I had done that, the day would have progressed quite differently, maybe even as much fun as boulder hunting.

We were so pleased with the variety of entries we received for our last Inviting Writing, about food and dating —they were sweet, funny, endearing, sad. Let's see if we can top it with this month's theme, a topic that anyone should be able to relate to: memorable meals. If it was the food itself that made it memorable, that's fine—make our mouths water sharing every delectable detail. But it's also acceptable—maybe even preferable—if the reason it was memorable was only tangentially related to the food. Maybe it was memorably disastrous (Dad burned breakfast, making you late for your driving test, which you subsequently failed), or was connected with a momentous event in your life (your first meal in your own home, for instance). Set the scene and let us feel whatever it was that still lingers in your memory, for better or worse.

I'll start.

When In Rome by Lisa Bramen

I had the most memorable meal of my life (so far) about 15 years ago, on a summer night in Rome. It wasn't the fanciest food I have ever eaten. It wasn't the most impressive feat of culinary skill; I don't even recall every dish that was served. It certainly wasn't the worst meal I've had—that dishonor may belong to a plate of lukewarm spaghetti swimming in orange grease, served by a grumpy waiter about an hour after I had ordered it. This was also in Rome. A travel tip: unless you are dining with the Pope himself, get as far away from the Vatican as possible before attempting to find a decent bite.

Here's some more advice: If you have the good fortune to be 24, a recent college graduate with a three-month Eurail Pass (acquired with a deep discount through the job you just quit at a corporate travel agency), make sure one of your stops is Rome. There, look up a former co-worker named Lisa (no relation to yourself), who moved there to start her own travel business. Even though you don't know her well, she will be happy to show you around. She will take you to off-the-beaten-track places, for instance, a church decorated entirely with human skulls and crossbones. She'll introduce you to local delicacies like pizza rustica —thin-crusted squares with little or no cheese—and candied chestnuts. She will know the best spots for gelato.

One night she will invite you to dinner with her Italian friends, Francesca and Paolo, and another man whose name you will not remember. Although they will attempt English conversation with you, they will speak Italian most of the time. You won't mind—all the better to soak in the atmosphere and the pleasurably melodic sound of the language, stripped of its meaning. Dinner will be at a small trattoria on a side street far from the tourist attractions. You will be seated outside; it will be a warm summer evening. You will drink wine.

The others will order food for the table to share. Each dish will be unfamiliar to you, exciting: fried zucchini blossoms stuffed with a soft cheese and something salty that you realize too late is anchovies (but, even though you have been a vegetarian for years, you will not care because it will be so delicious); orecchiette with broccoli rabe.

For dessert, you will order some lemon gelato to bring back to Francesca and Paolo's apartment. You will sit on their lovely terrace, eating gelato and drinking small glasses of pear brandy. You will feel giddy from the alcohol, the setting, the company.

At the end of the night, the nameless Italian man will offer you a ride back to your hostel. It will be on a Vespa. As you buzz through the streets of Rome on the back of his scooter, you will feel as if you could launch yourself into the heavens like Diana, the Roman moon goddess. You will remember this feeling forever.

What makes an unforgettable meal? The time, place and company – and the butter

The cannellini and chard on toast roars with garlic, but that alone cannot explain its magic.

Last night I had a meal I’ll remember, if not for the rest of my life, then at least for many years of it. The occasion was that I was not, for once, spending my Tuesday evening sending this magazine to press, the Easter Special having given us a break from our publishing schedule. What better reason to spend a small fortune on small plates?

It was the first night this year that it was warm enough to venture out without tights – or so I optimistically thought, appraising the weather from inside. I walked the 15 minutes to the restaurant in strappy sandals and sunglasses, my nails and handbag a cornflower blue that matched the sky.

Waiting for me at the bar was a lovely man – the kind of man who, despite our having had an extensive conversation about how we wouldn’t have the olives because he doesn’t care for them, added when I was done ordering: “And the olives, please.”

The beer was served in ice-cold glasses and the wine was orange; no one drinks rosé in N5. The menu was, of course, one of those that is written on a blackboard and changes daily – within an evening’s sitting, even. Burrata and grilled padróns became ricotta and grilled padróns, and eventually feta, cucumber and something else I can’t remember, courtesy of the aforementioned beer and wine, as the night wore on.

The menu listed only the barest ingredients of each dish in a way that makes you fear you are about to be served the most boring meal of all time – mackerel, cabbage – until, bam, heaven. “Spelt, peas, courgettes, basil” turned out to be the best risotto I’ve ever eaten – and given I’ve not eaten meat since I was 15, I’ve eaten a lot of risotto. We were not halfway through “cannellini and chard on toast” before I suggested we order a repeat; it roars with garlic, but that alone cannot explain its magic. The only problem with “chocolate and hazelnut cake, coffee cream” is that my date is a fast eater, and so I am not convinced I quite get my half. Or perhaps I am simply sad it is over so quickly.

I am often struck, listening to the podcast Off Menu – on which celebrity guests choose their dream starter, main, side dish, dessert and drink – by how often the selections are not about food alone, but about context, in the way that Coke tastes better out of a glass bottle on a hot, thirsty day. They don’t just want cacio e pepe; they want that particular cacio e pepe they had that day with that person in that place.

The last time I was in New York City , in 2018, I went to Del Posto, a classy Italian restaurant in Chelsea with a sweeping staircase and a grand piano that was never not being played. I could only just about afford the set menu – as a special treat, and at lunch time, when it was two-thirds the price of dinner. I remember nothing of the meal apart from the bread and butter – perfectly whipped and salty – which I think of near weekly. I looked up Del Posto ahead of a return to NYC this summer to find it has permanently closed.

Perhaps, I say to my father, it’s for the best: so giant had that butter grown in my mind that it would almost inevitably disappoint on second tasting. He tells me, from the chair next to his hospital bed, about how on a visit to Manhattan in the Eighties he would walk along West Broadway to his hostel each night in time to catch the sun setting at the end of the same street crossing through it. And about a bar, somewhere along it, where he sat in the window and ate an unforgettable salad.

We recall together a trip to Venice, when my youngest brother was a toddler who knew only the word “boat” (you can imagine how that went). And how we found, on the last night, after days of overpriced tourist fare, the restaurant. None of us knows where it was, or what it was called, or even what we ate. But we remember them stacking chair on top of chair to raise my brother up to table height, and how he ended the night covered in chocolate.

I had another memorable meal recently – in Bali, the night I received the phone call to say my father had been diagnosed with leukaemia. It was pouring with rain, and, having ignored the entreaties of “Miss, taxi?” every five metres, I arrived soaked to the skin. I sat alone, and drank passionfruit margaritas, and ate oseng oseng and gulai pakis and perfect, buttery paratha, and tried not to cry. Between bites, I texted friend after friend, “My dad has cancer”, though I was too overwhelmed to deal with their replies, as if saying it over and over would make it more real, less shattering. I wanted to eat forever, even as my stomach turned.

Family gatherings are usually memorable event because I get to meet relatives that I have not seen for quite sometime and the childhood memories that we get to share and laugh out. What makes it more interesting is the fact that it is the only time when we feast on a full animal that has been prepared by the family members. The animal, most often a cow is set aside specifically for the event is slaughtered in the compound by the men and subsequently cooked by the women. It is accompanied by many other delicacies that are definitely loved by the group. The feast is done strategically to ensure that at the time of eating, everyone is at the table and that there is no one in the kitchen or carrying out some activities. When its time for cooking and generally preparing the meal, everyone is engaged in a number of activities. This is done until when the food is ready and only waiting to be eaten. The feasting occasion is mostly done in the evening where it is accompanied by introduction of the members especially those that got spouses and children within the year.

This day, the program was changed to ensure that everyone pays attention to what was being said. Due to the inconveniences that come when people are eating, it was agreed that the speech and introduction session would be done before the eating. To prevent people from salivating over the food, it was also agreed that the food should be left in the kitchen and only be warmed and brought to the table after the introductions. Even though some people were against the idea, majority agreed that it would help them pay attention to what was being said rather than the food. As agreed, the food was locked in the kitchen as everyone headed to the tent where the official feasting was to be done. A register was done to ensure that everyone who had attended the event was present. This is usually done so that someone does not come later and demand a repetition of what was said because they were not there. After confirming that everybody was around, the introduction began from the eldest to the youngest.

The aroma from the kitchen was worth waiting for even as people laughed through the session. The ultimate was definitely enjoying the delicacies that had been prepared specially for the occasion. The family is big and diversified and so the recipes for the food were also diversified. Anybody that had a unique recipe was never locked out and allowed to prepare the meal. There was a lot to look forward to as people were served as per there wishes. The food was not only more than enough for everyone but also diversified to accommodate every taste. Well, after all had been said, the women were requested to go start warming the food and prepare the tables for the official feasting. It was as if everyone was waiting for this moment even as the laughter became louder. Plates and other cutleries were brought to the table as some of the foods that did not require warming streamed at the table. Suddenly a scream was heard from the kitchen.

Everyone got concerned thinking that probably an accident had just happened, the lady who had let out the scream was not talking and everyone kept wondering what was wrong. They tried to check if she had got burned or injured but everything was okay. In the process everything continued as normal. I was requested to talk to the lady to find out what was wrong and she whispered to me that she saw something in the stew that she was warming. Without waiting to hear the details, I rushed to the pot to have a look at it and probably signal others before something dangerous happened. What I saw shocked me and was held between speaking and just keeping quite. It was the main stew of the day and it would be disappointing to tell the expectant relatives that it could not be eaten. A cat had actually drowned in the soup!

The most unforgettable moment in my life is when one day I was travelling from Jammu to Dehli by train. I was in the first class, so only a few passengers were there with me. At a specific station, all of them got off. I was now in the compartment absolutely alone.

After a moment, a clever lady walked into the compartment and sat next to me. She had an ingenious scheme to rob me. She told me she would report to the railway police that I had robbed her if I did not hand over all the money I had to her. I was totally and utterly perplexed when I heard this horrible voice. I made a plan to save myself from that lady’s wicked plan. Therefore, I pretended to be a deaf and a dumb fellow and asked her to write what she wanted to say on a piece of paper. She wrote her request happily on the piece of paper and handed it over to me. I changed my seat to pick up a piece of writing. The railway policeman came and asked what the matter was. As smart as she was, the women burst into admissions, so she said I had robbed her of a thousand rupees. He seemed to believe in her false story at first, but when I gave the piece of writing to the police, she turned pale. She was caught red-handed, so I saved myself from her evil scheme.

Many destination marketers have utilized gastronomy as a source of new products and activities to attract tourists. Despite the substantial rise in the Chinese outbound market, very little is known about how Chinese tourists evaluate their travel dining experiences. By using narrative analysis, this study examines attributes that may affect Chinese tourists' evaluation of their travel dining experiences. On-site participant observation and focus group interviews were conducted, respectively, with Mainland Chinese, Taiwanese, and Hong Kong group tourists, while they were on holiday in Australia. A total of 15 attributes were identified, which were classified under the following six categories: tourists' own food culture, the contextual factor of the dining experience, variety and diversity of food, perception of the destination, service encounter, and tour guide's performance. The respective implications of the attributes on travel dining experience are also discussed. This is a draft version of the paper. The volume “Food and the Tourism Experience” provides an analysis of food experiences from a wide range of countries and regions around the world. The aim is to develop new knowledge on the relationship between food experiences and tourism that can support the development of appropriate policies, support mechanisms and marketing and branding activities. The OECD has a particular interest in food experiences because it seeks to promote policies that will improve economic and social well-being. Food is vital not only for survival and local development, but it also provides the basis for important newly-emerging creative and cultural industries. It is also an increasingly important part of tourism experiences, and food cultures around the world are a rich source of cultural, economic and social diversity. In the contemporary ‘experience economy’ sophisticated experiences are emerging that combine elements of education, entertainment, aesthetics and escapism to engage the consumer. As experiences become more complex and consumers become more knowledgeable and demanding, leisure and tourism markets have become more competitive, forcing suppliers to innovate and develop new service concepts. Food experiences for tourists form a vital part of the value network linking local food producers, suppliers and cultural and tourism entrepreneurs. Because of the important linkages between food experiences for tourists and other policy areas, including agriculture, food production, country branding and cultural and creative industries policies, it is important to develop an integrated, holistic approach to policy development and implementation. Food has a particularly important role in the development of tourism services, since it often comprises 30% or more of tourist expenditure, and this money is often spent directly with local businesses. It is also argued that integrating food experiences into sustainable tourism development in rural and outlying areas may help ease poverty. In order to utilize food and tourism as an economic development strategy, it is important to encourage visitors to stop, spend and stay longer. In the short-term, the focus should be on retaining visitor expenditure. In the medium term, the focus should be on developing networks and relationships within local businesses and organisations as well as with other regional stakeholders. In the longer term, the focus should be on the development of intellectual capital in order to enhance the regional knowledge base and to develop engaging food experiences. Tourists are increasingly seeking local, authentic and novel food experiences linked to the places they visit. Both at a regional and a national level, foods can become distinctive elements of the brand image of places and help to create distinctiveness. National culinary traditions are still strong, but as food becomes ever more globalised the authenticity of experiences is threatened. Tourists generally approach a country via an adapted version of its cuisine. This volume presents examples of strategies that can increase tourist knowledge of a country’s culinary offerings. Very often this involves a high level of collaboration between different stakeholders in a characteristic “foodscapes” which unite local culture, creativity and food. The important linkages between novelty, authenticity and locality in food experiences mean that small-scale food production is not an artifact of the past; it represents a route to the future. Creating ‘authentic’ experiences is often a question of careful framing and inventive and creative storytelling. Creating a strong narrative about place and the food culture that is linked to it can be an effective form of product development. Interest in culinary tourism may help rescue old traditions which are in the process of disappearing although there is a danger that tourists have less interest in the dish being authentic than in it appearing “exotic.”
