गाय एक पालतू पशु है जो कि आमतौर पर सभी जगह पर पाई जाती है. राष्ट्रीय डेयरी विकास बोर्ड की 2012 की रिपोर्ट के अनुसार भारत में करीब 190 मिलियन गायों की जनसंख्या है. पूरे विश्व भर से ज्यादा गाय हमारे भारत में ही पाई जाती है.

भारत में गाय को सम्मान की नज़रों से देखा जाता है क्योंकि हिंदू धर्म में कहा जाता है कि गाय के अंदर सभी 322 करोड़ देवताओं का वास होता है साथ ही भारत में रहने वाले लोगों ने गाय को मां की संज्ञा दी है. भारत में गाय का बहुत ख्याल रखा जाता है और गाय की पूजा भी की जाती है.

गाय का संबंध भगवान श्री कृष्ण से भी जुड़ा हुआ है क्योंकि उन्हें गाय बहुत पसंद थी और वे उन्हें खूब प्यार दुलार देते थे.

गाय की रचना –

गाय की रचना वैसे तो सभी देशों में समान ही पाई जाती है लेकिन गाय की कद काठी और नस्ल में फर्क होता है. कुछ गाय अधिक दूध देती हैं तो कुछ कम देते है. गाय का शरीर बहुत बड़ा होता है इसका वजन 720 किलो से भी अधिक होता है.

गाय का शरीर आगे से पतला और पीछे से चौड़ा होता है. गाय के दो बड़े कान होते हैं जिनकी सहायता से वे धीमी धीमी और अधिक तेज आवाज भी सुन सकती है. गाय के दो बड़ी आंखें होती हैं जिनकी सहायता से भी लगभग 360 डिग्री तक देख लेती है.

गाय एक चौपाया पशु है और चारों पैरों में खुर्र होते है जिसकी सहायता से भी किसी वे किसी भी कठोर स्थल पर चल सकती है. गाय का मुंह है ऊपर से चौड़ा और नीचे से पतला होता है. इसके पूरे शरीर पर छोटे-छोटे बाल होते है. गाय के एक लंबी पूछ होती है जिसकी सहायता से वे अपने शरीर पर लगी हुई मिट्टी को हटाती रहती है.

गाय के 4 थन होते हैं और इसकी गर्दन लंबी होती है. गाय के मुंह के सिर्फ निचले जबड़े में 32 दांत पाए जाते है इसीलिए गाय लंबे वक्त तक जुगाली कर के खाने को चबाती है. गाय के एक बड़ी नाक होती है. गाय के दो बड़े सिंग होते है.

गाय का उपयोग –

गाय एक पालतू पशु है इसलिए इसे घरों में पाला जाता है और सुबह शाम इसका दूध निकाला जाता है एक गाय एक समय में 5 से लेकर 10 लीटर दूध देती है कुछ अलग नस्ल की गाय अधिक दूध भी देती है.

पुराने जमाने में गायों को खेतों में हल जोतने के काम में भी लिया जाता था. गाय के दूध से दही छाछ पनीर और अन्य दूध से बनने वाली मिठाइयां बना सकते है.

गाय के गोबर को सुखाकर इंधन के काम में लिया जाता है साथ ही गाय की गोबर का उपयोग खेतों में खाद के रूप में भी प्रयोग किया जाता है.

वर्तमान में लोग गायों का मांस भी खाने लगे है जिसे “बीफ” कहा जाता है. गाय अपने पूरे जीवन भर में कुछ ना कुछ देती ही रहती है. गाय के मरणोपरांत इसकी हड्डियों से कई शिल्प कलाकृतियां बनाई जाती है और इसकी खालको सुखा कर चमड़े के रूप में उपयोग में लिया जाता है.

गाय के गोमूत्र को बहुत पवित्र माना गया है और इसके गोमूत्र को आयुर्वेदिक औषधियों के रूप में उपयोग में लिया जाता है जो कि कई बड़ी बीमारियों को जड़ से खत्म करने में कारगर है.

गाय की नस्लें –

भारत में कई प्रकार की नस्ल की गाय पाई जाती है. जिनमें कुछ अच्छे दूध देने वाली होती है तो कुछ मजबूत शरीर वाली होती हैं जिससे उनके बछड़े भी मजबूत शरीर वाले पैदा होते हैं और उनसे खेतों में हल जोतने के रूप में काम में लिया जाता है.
